The Chronicles

Preserving 2000 Years of Flavor

Tracing back to the kitchens of ancient emperors, Biryani Babu preserves the sanctity of slow-cooking and authentic spice sourcing. Our Khansamas are the descendants of the royal cooks who once served the Mughal Empire.

Ancient Manuscripts

Recipes recovered from royal court archives, translated from Persian and Sanskrit.

Earthen Handi Tradition

We exclusively use porous clay pots from the Ganges riverbed for natural mineral infusion.

The Ritual

9 Hours of Patience

01

6-Hour Marination

Premium cuts of meat are tenderized with green papaya and soaked in a blend of 32 spices, Kashmiri saffron, and cold-pressed oils.

02

The Dum Pukht

The handi is sealed with dough and slow-cooked over low flame for 3 hours, allowing the meat to cook in its own juices and steam.

03

Royal Serving

Served in regal brassware alongside our signature burhani raita and slow-roasted mirchi ka salan.
